Breakfast. Most of the time, it's as simple as wake up and eat.
But for those rare occasions when you have the time to be a little more fancy, treat yo' self with our Sausage & Egg Sliders!
This one is definitely worth all the time and effort!
- Beef & Garlic Sausages | 4 Large
- Red Capsicum | 1 Large
- Brown Onion | 1 Medium
- Ground Cumin | 1 tsp
- Smoked Paprika | 1 tsp
- Mozzarella | 3/4 Cup (Grated)
- Eggs | 4
- Bread Rolls | 4
- Spring Onion | To garnish
STEP 1 | Heat oil in large frying pan over medium-high heat. Add onion and capsicum. Cook, stirring, for 2 minutes or until softened. Squeeze mince from sausages into a bowl. Roughly crumble meat. Add sausage mince. Cook, stirring, for 5 minutes, breaking up with a wooden spoon, or until browned. Add paprika and cumin. Cook, stirring, for 30 seconds or until fragrant. Remove from heat.
STEP 2 | Cut a wide hole out of each roll, removing the tops (keep for later). Press bases of buns down to compact. Place buns and tops in an oven proof tray/dish.
STEP 3 | Add the sausage mixture and mozzarella. Crack one egg into each bun (taking care that the egg white stays on top of the roll). Garnish with chopped spring onions.
STEP 4 | Bake in a 200c oven for 20 to 30 minutes or until eggs have just set and buns are golden. Serve hot with tomato relish.
