Here's one for the sweet tooth's! Our Rocky Road Slice recipe has been made and devoured at many, many parties over the years. It's so easy to prepare, and is fantastic to keep in the fridge as a go-to if unexpected guests turn up for a cuppa!
- Plain Biscuits | 250g
- Butter | 200g (Melted)
- Peanut Butter | 100g
- Turkish Delight Chocolates | Enough to cover tray
- Milk Chocolate Chips | 800g
- Marshmallow | 200g (Cut In Half)
- Coconut | 1 - 2 Handfuls
STEP 1 | Blend biscuits until they are a fine crumb. Add butter and peanut butter and mix until well combined.
STEP 2 | Line an oven tray with baking paper. Add biscuit mix to make a thick layer on the bottom. Press until firm and compacted. Refrigerate for 1 - 2 hours.
STEP 3 | Using a large heat-safe bowl, add the milk chocolate chips and double-boil over a pot of hot water.
STEP 4 | Remove the biscuit base from the fridge, and coat with a thin layer of the melted chocolate. Add the Turkish delight chocolates (in straight rows) and pour over another layer of the melted chocolate.
STEP 5 | Add the sliced marshmallows (in straight rows) and again, pour over the remaining melted chocolate (make sure it covers the whole dish, including all the cracks and crevices.
STEP 6 | Sprinkle with a handful or two of shredded coconut and refrigerate overnight to let it set.
