Potato & Leek Soup

Australia is about to be hit with the coldest winter we've had in years. So stay inside, shut the windows, turn up the heat and get ready to make the most DELICIOUS soup you've ever made!


Ingredients

• Chives | Chopped

• Leek I Finely Chopped

• Potato I 1Kg I Peeled I Chopped

• Cream I 100mL

• Vegetable Stock | 300mL

• Bacon I 4 Rashers I Chopped

Method

STEP 1 | Peel and chop all potatoes and set aside. Chop leek and sauté in butter. Add potatoes to the pot of sautéed leek and cover with vegetable stock. Put on the stove to boil.

STEP 2 | Chop chives and set aside. Chop bacon and cook in fry pan.

STEP 3 | Once potatoes are soft and cooked. Blend until smooth. Add cream and continue to blend until combined.

STEP 4 | Serve in a bowl and sprinkle with bacon and chives. Serve with crispy warm bread.
