Mac & Cheese with an Apple Cider Twist
Nothing says comfort food like a classic Mac & Cheese. However, if you're looking to lift your MC game, try our version which adds apple pieces and some hard cider for that little extra kick!
Chef's Tip: There's no such thing as too much cheese. If you think you've added too much, add some more!
• Parsley | 1 Bunch | Finely Chopped
• Shallots | 4 Shoots | Chopped
• Apple | 1 | Diced
• Onion | 2 Medium | Diced
• Butter | 30g | Unsalted
• Apple Cider | 375mL
• Plain Flour | 1/4 Cup
• Milk | 750mL
• Salt & Pepper | To Taste
• Brie Cheese | 75g
• Aged Cheddar | 75g
• Smoked Cheddar | 75g
• Mozzarella | 200g
• Pasta | 700g | Cooked Al Dente
STEP 1 | Melt the butter in a large saucepan. Add the onion, apple and saute for 10mins. Add the hard cider and simmer until reduced.
STEP 2 | Add the flour and combine well. Add the milk, and stir until mixture thickens. Season with salt and pepper.
STEP 3 | Once mixture has thickened, add the four cheeses and continue to stir until they have melted. Add parsley and shallots, then stir until combined.
STEP 4 | Add pasta (cooked al dente) to the cheesy sauce, and mix well. Transfer to a baking dish, and sprinkle with a little extra mozzarella cheese.
STEP 5 | Bake in a 200c oven for 20 - 25mins or until golden brown.
