
Loaded Steak Fries
If the kids (or kidults) are whinging about how hungry they are, give our Loaded Steak Fries recipe a crack, and see how long it takes before a button pops!
If you want to give this meal SOME semblance of "nutrition", you can add cherry tomatoes and some avocado slices on top (optional but recommended).
Ingredients
- Creme Royal Potatoes | 2 Large (Peeled)
- Paprika | 4 Tbsp
- Salt & Pepper | 1 Tbsp
- Olive Oil | 2 Tbsp
- Coriander | 1 Bunch (Finely Chopped)
- Orange | 1/2 (Juiced)
- Lime | 1/2 (Juiced + Small wedge for plating)
- Minced Garlic | 1 Tbsp
- Beef Scotch Fillet | 2 Steaks
- Cherry tomatoes (Optional)
- Avocado (Optional)
- Sour cream (Optional)
STEP 1 | Slice the potatoes into wedges, chips or fries (whatever your preference). In a large bowl, combine the potatoes, olive oil, salt, pepper, and paprika until each fry is fully coated.
STEP 2 | Place the fries on a large baking tray and bake in a pre-heated oven (230c) for 30-35 minutes, or until the fries are crispy and golden brown.
STEP 3 | In a separate baking dish, add the beef steaks, coriander, minced garlic, paprika, orange juice, lime juice and seasoning. Let marinate for 20mins.
STEP 4 | Heat a pan over medium heat. Cook the steaks for 3mins on both sides. Remove and let rest for 10mins.
STEP 5 | Once steak has rested, dice it up into bite sized pieces.
STEP 6 | In a large bowl or serving dish, add the baked fries, mozzarella cheese, diced steak, then add more mozzarella to the top and re-heat (in microwave or oven) until cheese is melted.
STEP 7 | Before serving, top with cherry tomatoes, avocado slices, sour cream and a small squeeze of lime juice.
