Crispy Breakfast Tostadas
Looking to up your Father's Day breakfast game this weekend? These Crispy Breakfast Tostadas are a great idea! It's the perfect, crunchy twist on boring bacon and eggs!
STEP 1 | Spray tortilla bread with oil and bake in a 180oC oven for 4 minutes or until golden brown. Add grated cheese and put back in the oven until the cheese has melted.
STEP 2 | Sprinkle tomatoes with olive oil, salt and pepper and bake in the oven for 10 minutes.
STEP 3 | Smash the avocado with some salt and pepper. Chop the coriander and add this to the sour cream.
STEP 4 | Add butter to a pan and fry the eggs. After which, cook the bacon in the butter residue.
STEP 5 | Assemble the cheesy tortilla by adding bacon, egg, tomatoes, sour cream mixture and smashed avocado. Finish it off with a light sprinkle of smoked paprika.

- Avocado | Smashed
- Sour Cream | 2 Tablespoons
- Coriander | Fresh | Chopped
- Cherry Tomatoes | 1 Punnet
- Eggs | 4 | Fried
- Bacon | 4 | Short Cut
- Cheese | Grated | 50g
- Butter | 20g
- Salt & Pepper
