Creamy Udon Soup with Pork Wontons


As the cooler nights return, our creamy Udon soup with pork wontons is the perfect meal to warm the whole family. With ingredients full of vibrant textures, and complimentary flavours - we're definitely adding this one to our favourites list! Don't be afraid of its complexities; each part of this recipe is really easy to make, and is well worth all the extra effort!



Wonton Ingredients

• Pork Mince I 500g  
• Soy Sauce I 1 Tbsp
• Ginger I Minced I 1 tsp
• Sesame Oil I 1 Tbsp
• Cornflour I 1 tsp
• Sugar I 1 tsp
• Rice Wine Vinegar I 1 tsp
• Shallots I 2 Stalks I Finely Chopped
• Wonton Wrappers I 1 Packet
• Salt I 1 tsp

Soup Ingredients

• Red Curry Paste I 2 Tbsp
• Coconut Milk I 1 can
• Vegetable Stock I 1L
• Udon Noodles I 300g
• Water Chestnuts I 1 can
• Bamboo Shoots I 1 can
• Bok Choy I 2 bunches
• Shallots I 2 Stalks I Finely Chopped


Method
 

STEP 1 | Finely chop the shallots and put to one side. Starting with the wonton filling; add the sesame oil, ginger, sugar, soy sauce and rice wine vinegar in a bowl and whisk together. Add the mince pork to the mixture and combine well. Season well with salt and add around half of the shallots. Stir through again until combined.

STEP 2 | Spoon roughly 1 teaspoon of the mince filling onto the center of the wonton wrapper. Lightly wet the edge of the paper and fold into a triangle. Press the wonton wrapper together and ensure a tight seal. Wet and pinch together 2 corners of the triangle. Set water to the boil and cook in 3 batches for 3 minutes per batch. Place the cooked wontons to the side.
Note: Do not stack the wontons on top of one other as this will cause them to fuse together.

STEP 3 | Make the soup base by placing red curry paste in a saucepan with some oil and cook off for 1 minute. Add the vegetable stock and then the coconut milk. Bring the temperature to a low simmer. Add in the Udon noodles and simmer for 2 minutes. Add the water chestnuts, bamboo shoots, and the remaining shallots then simmer for 1 - 2 minutes. Add in the bok choy and wontons. Serve in a large bowl.
