Creamy Pumpkin Fettuccine

This deliciously Creamy Pumpkin Fettuccine is a fabulous meal for those nights when you don't have much time to spend in the kitchen.
Ingredients
  • Butter | 1 Tablespoon
  • Minced Garlic | 1 Teaspoon
  • Chicken | 500gms | Diced
  • Parsley | 1 Bunch | Finely Chopped
  • Pumpkin | 1/2 | Pureed
  • Thickened Cream | 1 Cup
  • Parmesan Cheese | 1 Cup
  • Fettuccine | Fresh or Packaged
  • Fetta Cheese | To garnish
  • Pine Nuts | To garnish
Method

STEP 1 | Add butter and minced garlic to a hot pan.

STEP 2 | Add diced chicken and stir until cooked.

STEP 3 | Chop, steam and puree pumpkin. Add to the pan, and stir well

STEP 4 | Stir in 1 cup of thickened cream.

STEP 5 | Finely chop parsley, and add to pan. Season well.

STEP 6 | Add Parmesan cheese, and stir through.

STEP 7 | Cook fettuccine, and mix well through sauce

STEP 7 | Garnish with roasted pine nuts and fetta cheese
