Asparagus Parcels with Thyme Honey
• Asparagus | 1 Bunch I Ends Trimmed
• Extra Virgin Olive Oil | 1 Tablespoon
• Brie Cheese | Sliced
• Frozen Puff Pastry | 1 Sheet | Thawed
• Egg | Beaten
• Salt | To Season
• Pepper | To Season
• Honey | 1/4 Cup
• Butter | 1 Knob
• Thyme Leaves | 1 Tablespoon
STEP 1: Preheat the oven to 190oC. Line a baking tray with grease proof paper.
STEP 2: Toss together the asparagus, olive oil, salt and pepper.
STEP 3: Cut the pastry (see video at 0:55) and place asparagus and brie in center.
STEP 4: Take two corners of the pastry and wrap up and over to enclose. Transfer to prepared baking tray.
STEP 5: Brush pastry with egg and transfer to oven. Bake for 20-25mins or until golden brown
STEP 6: Melt together the butter, honey and thyme in a small saucepan over low heat.
STEP 7: Serve the patries warm, drizzled with thyme honey.
