We love to use the Kent when making this recipe because of it's perfect viscosity and incredibly sweet flavour profile (Yes, we love pumpkin soup...can you tell?)
• Kent Pumpkin I 1/2 I Chopped
• Onions I 2 I Chopped
• Vegetable Stock I 1L
• Cracked Pepper
• Sour Cream I 1 Dollop
• Shallots I 2 Stalks I Finely Chopped
STEP 1 | Chop up the pumpkin into large pieces. Roughly chop the onion. Place both the onion and pumpkin into a pot and cover with the vegetable stock. Bring to the boil and then simmer until cooked.
STEP 2 | Blend the pumpkin and onion with a hand held stick blender. Add cracked pepper.
STEP 3 | Serve and garnish with sour cream and shallots to taste.
