We've covered this one with all our favourite berries 🍓 but you can decorate with any number of sweet things that your festive heart desires!
The best part is that the kids can get involved too! 🎅🏻🤶🏻
• Egg Whites | 6
• Salt | 1 Pinch
• Caster Sugar | 1.5 Cups
• Thickened Cream | 250mL
• Strawberries | 1 Punnet | Chopped
• Raspberries | 1 Punnet
• Blueberries | 1 Punnet
• Mint Leaves | 1 Bunch | Stems Removed
• Icing Sugar | To cover
STEP 1 | Add salt to egg whites and use electric beaters to whisk until firm peaks form. Gradually add sugar, beating, until meringue is thick and glossy and sugar dissolves.
STEP 2 | Preheat oven to 120C/100C fan forced. Draw a circle on a sheet of baking paper. Then, draw a smaller circle inside larger circle. Place paper, pencil-side down, on baking tray.
STEP 3 | Using a piping bag and the drawn circles as a guide, pipe the meringue, tracing both circles. Then spoon the meringue onto prepared tray to form a wreath. Use a spatula to smooth surface. Bake for 60 to 90 minutes or until crisp and dry. Turn off oven. Cool, with door closed, for 90 minutes. Cool completely with door ajar. Place on plate.
STEP 4 | Add thickened cream to bowl, and whisk until silky. Spoon around top and edges of pavlova wreath.
STEP 5 | Garnish with fruit & berries (or any sweet ingredients you like) and dust with icing sugar.
